Please be sure to measure out all your ingredients before the class begins.
For this class, you will need the following equipment for both the Bagels & Pretzels:
- A scale or measuring cups
- A couple of Measuring teaspoons
- 2 medium to large bowls
- 1-2 medium bowls
- 1 small bowl
- Plastic/saran wrap
- A bench scraped or chef's knife
- Some parchment paper (optional)
- A baking tray
- A pastry brush
- A Rubber spatula
- 1 medium to large size pot
- A spider kitchen utensil or hand strainer or metal tongs (will be using to flip pretzels in boiling water)
Don’t forget to look in the pantry for the following ingredients, or add them to the grocery list for your bagels:
- 2 cups or 240g flour + extra flour for dusting
- 2 cups or 500ml 2% Greek yogurt
- 2 teaspoon salt
- 1 Tablespoon of baking powder
- Egg wash (1 egg with 2 tablespoon of water)
- Everything bagels seasoning, sesame seeds, poppy seeds, salt, caraway, any toppings you would like to put on your bagels
Don’t forget to look in the pantry for the following ingredients, or add them to the grocery list for your pretzels:
- 2 teaspoons of sugar
- 1 Cup or 250ml of warm water
- 1 Teaspoon of active dry yeast
- 2 Teaspoons of salt
- 2¼ cups or 270g of Flour
- 1 Tablespoon or oil of melted butter
- 6 Cups or 2000 ml of water, in a pot over stove top
- ⅔ of a cup or 85 g of baking soda (for water mixture)
- Egg wash (1 egg + 2 tablespoon of water) or coconut oil * you can use the same egg wash that you are using for your bagels*
- Poppy seeds, sesame seeds, or other toppings
- 2 Teaspoons of either Vegetable, Canola or Coconut oil
Bagels - Recipe
Yields 8
Ingredients:
- 2 cups or 240g flour + extra flour for dusting
- 2 cups or 500 ml of 2% Greek yogurt (if you use a lower percentage of fat you will need more flour on hand)
- 2 teaspoon salt
- 1 tablespoon baking powder
- egg wash (1 egg with 2 tablespoon of water)
- toppings such as poppy seeds, sesame seeds, etc
Method:
- Preheat your oven to 375F.
- Add flour, baking powder, and salt to a bowl, mix together. Add yogurt to bowl, stir until combined.
- Sprinkle extra flour on your counter, pour dough on top.
- Start kneading gently. If the dough is sticking to your hands, sprinkle in some flour a little at a time until your dough is soft and smooth. It should not be sticking to your hands.
- Once smooth, shape into a nice ball and cut into 8 equal pieces.
- Take one piece and roll it into your hands until you have a thick rope, then make your bagel shape by pinching the 2 ends of the rope together.
- In a small bowl, beat your egg with a small amount of water.
- Place formed bagels on a baking sheet lined with parchment paper, take pastry brush and brush each bagel with your egg wash.
- Sprinkle your bagels with sesame, poppy seeds, etc and bake for 20-25 minutes.
- They are done when they are puffed up and golden brown. Let cool before enjoying.
Pretzels - Recipe
Yields 4
Ingredients:
- 2 Teaspoons of sugar
- 1 Cup or 250ml of warm water
- 1 Teaspoon of active dry yeast
- 2 Teaspoons of salt
- 2 ¼ Cups or 270g cups of Flour
- 1 Tablespoon or oil of melted butter
- 6 Cups or 2000 ml of water, in a pot over stove top
- ⅔ of a cup or 85g of baking soda (for water mixture)
- Egg wash (1 egg + 2 tablespoon of water) or coconut oil
- Poppy seeds, sesame seeds, or any other toppings
Method:
- Start by activating your yeast with water and sugar in a large bowl. Once the liquid becomes a milky colour it's ready.
- In a separate bowl, mix your flour and salt. Add it to your liquid. Add your 1 tablespoon of oil or melted butter. Stir it together and knead until it forms a nice dough ball.
- Oil the top of your dough ball and cover until it doubles in size (40 mins).
- In the meantime, start to boil your water with baking soda over the stove top on medium high. Also, preheat your oven to 450F.
- Once dough has risen, separate your dough into 4 equal pieces and roll each piece into a long rope until you can form a pretzel shape or any shape you would like.
- Once shapes are formed set them on a baking sheet lined with parchment paper.
- Once your water and baking soda comes to a rolling boil you can boil each pretzel individually for 30 seconds a side.
- Put them back onto the parchment paper and brush them with egg wash or coconut oil (for plant based). Top off with garnishes and bake in a preheated oven at 450F for 10- 15 minutes.
- Let cool and Enjoy!
